St Patrick's Day El Pastor taco with green salsa
If you are a festive person these are the perfect tacos for you. We have created a limited edition green tortilla that is naturally colored with cactus, cilantro and spinach. This recipe uses red pork meat, pineapple, white onion and a green salsa to make the colors pop!
4 lb ( 2 kg ) pork back or picnic shoulder in thin steaks
1/2 cup apple cider vinegar
1 tbs bay leaves
1/2 tbs cumin
1/2 tbs pepper
1/2 tbs cinnamon
1/2 tbs cloves
1 tbs oregano small piece achiote or anatto ( red food color ) optional
2 garlic cloves
1/2 piece onion
5 guajillo pepper and 2 puya pepper
2 tbs salt
Boil chilies in water for 20 minutes and then add them and the rest of the ingredients to a blender with a little bit of water from the chilies. Pour this paste on your meat and let it marinate in the fridge for 24 hours. Then cover the meat in foil and bake it at 400 degrees Fahrenheit for 2 hours.

1 small garlic
1 bunch cilantro
This is a traditional salsa that is very popular in Mexico. It was lacking a little flavor when I made it so I added a little oregano, cumin and salt. Once it went on the taco with all the other flavors it was great.
You can also garnish your tacos with the traditional onion, lime and pineapple chunks
